Since I had the stuff out anyway I thought I'd try making some peanut butter cookies. But gluten free cookies are a bit dry and crumbly, even with the magic ingredient Xanthan gum, so I figured what might give them moisture and stick them together a bit more?...Jam! My jam however, was growing cultures, so I used some Ikea Lingonberry Jam instead and it goes really well!

They aren't dry or crumbly at all and no recipe used. Am quite pleased :o)

What I have been doing today...amongst tidying and feeling knackered

Gluten Free Glamorgan Cheese Rolls.
My verdict is very nice indeed, but needs salt and pepper adding to the mix.
